Tea Brack

Ingredients

  • 150g  dark brown sugar.
  • 230ml  tea (I use Lady Grey)
  • 3tbsp Highbank Orchard Liqueur (or whiskey)
  • 150g sultanas.
  • 150g mixed fruit.
  • 1 egg
  • 150g plain flour.
  • 1tbp baking powder.
  • 1tsp mixed spice

Method

  1. Dissolve the sugar in the hot tea and leave to cool.
  2. Mix in the liqueur, sultanas and mixed fruit and soak overnight.
  3. Preheat the oven to 170C.
  4. Grease and line a 1lb loaf tin.
  5. Mix the flour, baking powder and mixed spice together.
  6. Beat the egg.
  7. Mix them all into the fruit.
  8. Pour into the loaf tin and bake for 1 hour.
