Here’s an original Guinness Stew recipe, perfect for a cosy evening at Croan Cottages. This hearty stew is rich, savory, and highlights the depth of Guinness.

Guinness Beef Stew Recipe for Croan Cottages
Serves: 4

Cooking Time: 2 hours 30 minutes

Ingredients:

  • 600g stewing beef, cubed
  • 2 tbsp plain flour (or Gluten free alternative)
  • 2 tbsp vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and thickly sliced
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, diced
  • 500ml Guinness stout
  • 500ml beef stock
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf
  • 2 sprigs fresh thyme (or 1/2 tsp dried thyme)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 160°C.
  2. Prepare the Beef: In a mixing bowl or plastic food bag, coat the beef cubes with the flour, adding a pinch of salt and pepper to season.
  3. Brown the Beef: Heat 1 tbsp of the vegetable oil in a large, oven-safe pot over medium-high heat. Add the beef in batches, browning it on all sides (about 5 minutes per batch). Remove browned beef and set it aside. Don’t add too much to the pan each time as this will cause the beef to stew, rather than fry. You might need to add some more oil for each batch.
  4. Cook the Vegetables: In the same pot, add the remaining 1 tbsp of oil. Add the onions, garlic, carrots, celery, 1 of the potatoes (chopped). Sauté for 5-7 minutes, until the onions are soft and starting to colour.
  5. Deglaze the pan with Guinness: Pour in the Guinness, scraping up any browned bits from the bottom of the pot with a wooden spoon. Let it simmer for 2-3 minutes to reduce slightly.
  6. Combine Ingredients: Return the beef to the pot. Add the beef stock, tomato paste, Worcestershire sauce, bay leaf, and thyme. Stir to combine all ingredients. Season with salt and black pepper as needed.
  7. Slow-Cook the Stew: Cover the pot with a lid and transfer it to the preheated oven. Let it cook slowly for about 2 hours, stirring occasionally.
  8. After one hour, add the remaining potatoes to the Pot.
  9. Check for Doneness: After 2 hours, check the beef. It should be tender and easily break apart with a fork. If needed, cook for an additional 15-20 minutes.
  10. Serve: Ladle the stew into bowls, garnish with freshly chopped parsley, and serve with crusty bread or mashed potatoes.

Tips:

For extra flavor, let the stew sit for 10 minutes before serving.
